About your host, Yosuke

Good food brings a good smile. I’ve known this when I was a child. Ever since then, I’ve been devoting myself in the field of cooking for over 30 years and developed a distinctive understanding of Japanese cuisine. As I turned 32 years old, I started my own restaurant “Ikkyo” to with a mission to leave the beautiful culture of Japanese cuisine to future generations and to promote it to the world.

What to expect

As been registered as Intangible Cultural Heritage by UNESCO, Japanese cuisine has been watched with interest all around the world. I imagine Japanese food is one of the things people look forward to when people visit Japan. But the “real” traditional Japanese Cuisine has not been noted publicly. I will give you an experience that you can’t have anywhere else as an expert in Japanese cuisine. Use your five sense to earn a deep knowledge of Japanese cuisine. Let’s encounter the moment you overcome the stereotype of Japanese cuisine together at a restaurant that even Jeff Bezos, Amazon’s CEO has visited.

Day 1 / 3Hours

What we'll do

We’ll begin with a quick self-introduction at my restaurant. After that, we will start off with the basics of Japanese cuisine. We’ll go through things like choosing the most suitable knife for ingredients and making “Dashi” soup, the soup which decides the taste of the food. At the end of the day, you will have some Soba(Japanese noodles) and Tempura with the “Dashi” you made yourself.

Day 2 / 3hours

What we'll do

We’ll meet up at the famous Tsukiji Market. I will guide you through the market and teach you how to choose the best fish. We will also buy ingredients for your main dish tomorrow. Then will have Sushi for lunch at a restaurant nearby where I really trust. There will be a special menu prepared just for you. We’ll go back to my restaurant and I will bring on a fish filleting show with the fish you bought at the market.

What we'll do

Let’s get into the most exciting part of this activity. I will teach you about the cultural background of Kaiseki dishes(Japanese Course meal). I will use the fish you chose yesterday to make a Kaiseki dish just for you. Throughout the three-days activity, I want you understand that there are no limits in the way Japanese cuisines are made, but only infinite potentials.
